New Point Knives are designed to make food preparation safer for everyone
In May 2005, my wife Liz read a news article on the dangers of the common kitchen knife and the serious or fatal wounds they can inflict.
The article was centred on a report produced by A & E doctors at the West Middlesex University Hospital and the life threatening injuries they witness on a daily basis. As part of their research they consulted 10 top chefs from around the UK, and were told that 'long pointed knives have little practical value in the kitchen' and 'the point of a short blade was just as useful when a sharp end was needed.'
For us this prompted an obvious question; when was the last time we used the long sharp points on our kitchen knives? To our surprise the answer was almost never! We are keen home cooks so we were amazed that it had not occurred to us before. Therefore as an Industrial Designer, I researched the idea of designing a safer point and created the New Point knife blade. It soon became obvious that the only reason we cling on to the misguided belief that we need a dangerously long sharp point is for the sake of fashion.
Our goal: Design a range of safer, everyday kitchen knives which are accessible to the widest possible spectrum of society. For example, parents with young children, the elderly or infirm, those with poor motor skills, schools and colleges, catering firms, young chefs and any organisations where food preparation safety is paramount.
We all know that there are two essential elements of a kitchen knife blade; the cutting edge and the point.
The cutting edge cannot be made safer without drastically affecting its functionality. However, as a result of my research, I discovered that in the domestic environment the long hazardous point is very rarely used.
A small sharp point is required for many cooking tasks such as trimming and scoring meat and vegetables as well as piercing and opening food packaging.
Although a Santoku or 'sheepsfoot' design blade is slightly safer than a normal long point, only the New Point profile offers the best combination of functionality and protection.
The favoured design was tested extensively on the most advanced equipment available in the UK. The results determined that the type 'R' point was more effective at reducing the risk of serious injury than any other point design, even ones which were completely rounded or flat with no point at all.
